(Interview to Giancarlo Perbellini)
The fair complex of Bergamo on the 15th and 16th March within the Cooking Expo, will host the new event which Bergamo devotes to high cuisine, Selezione Italiana 2010 of Bocuse d'Or, the most important gastronomy competition at international level invented by the French chef Paul Bocuse in 1987, with the aim of promoting the best emerging chefs at international level.
In the two-day competition, 16 young chefs (8 per day) will challenge one another in preparing "live" two dishes, one based on fish and the other on meat. The winner will be chosen by a jury composed of twenty people amongst the most prestigious names in Italian cuisine and chaired by Giancarlo Perbellini, chef and patron of the Perbellini restaurant of Isola Rizza (Verona). The winner of the Bergamo contest will later defend the flag of Italian cuisine at the Bocuse d'Or Europe (Geneva 7th and 8th June 2010) where the winner will compete against the winners of the same competitions housed in Germany, Austria, Belgium, Croatia, Denmark, Spain, Estonia, Iceland, Luxemburg, Hungary, Norway, Netherlands, Slovak Republic, Finland, France, Great Britain, Russia, Sweden and Switzerland. If the Italian winner succeeded in being amongst the top twelve, he will be entitled to take part in the grand final in Lyon (25th and 26th January 2011) where the world title will be at stake and fought for amongst the winners and those who qualified at other continental stages.
Giancarlo Perbellini, the jury chairman and the great patron of the event has been interviewed by Lesoste.it for this occasion.

Do you think that the values of our emerging chefs is high enough that we can compete equally with the most awarded European and international competitors?
